Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/4 Cup Red Wine Vinegar
  • 1/3 Cup Olive Oil
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Onion, Minced
  • 1 teaspoon Garlic, Minced
  • 1 teaspoon Oregano
  • Sea Salt
  • freshly ground black Pepper
  • 2 ripe tomatoes, diced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • kosher salt and freshly ground black pepper
  • 1/4 cup fresh basil leaves
  • 6 slices mozzarella

Preparation

Step 1

1.Place the red wine vinegar, olive oil, lemon juice, onion, garlic, oregano salt and pepper in a gallon size plastic bag and squish it around to combine it. Add the chicken breasts and seal up the bag. Rub the chicken a bit to help it absorb the flavors and set it aside for at least 20 minutes, but up to 24 hours.
2.In a medium bowl, combine the tomatoes, olive oil, balsamic vinegar, salt and pepper, set aside.
3.Heat your grill to medium high or about 400º.
4.Once the grill is hot, place the chicken on it and close the lid. Cook for about 6-7 minutes and then flip over and cook the other side. While the other side is cooking, carefully place a layer of basil leaves on the chicken and then the marinaded tomatoes. Top with a slice of mozzarella.
5.Close the lid on the grill very carefully so the tomatoes don’t fall off. Cook about 2 minutes so the cheese can melt and then remove from the grill.
6.Serve hot and enjoy!
