No Knead Roasted Garlic Potato Bread

This is a really good bread that stays fresh for quite a while.

Ingredients
- 1 head of garlic
- 6 cups of water
- 13 cups o flour (Ap, Artisian, European, Bread or a combo)
- 3 Tb yeast
- 3 Tb salt
- 3 tb sugar
- 2 cups mashed potatoes (use either fresh microwaved potatoes or instant, both are great)

Preparation
Step 1
Wrap head of garlic in aluminum foil w/ drizzle of olive oil. Bake at 400 degrees for 30 min. Cool. After cooled, cut off top and squeeze out garlic into mixer bowl. Put rest of ingredients into mixer bowl & mix. Put into container & let sit at room temp for 3-4 hours. Then put in frig for 7-14 days. On baking day w/ heavily floured hands rev grapefruit sized pieces of dough & shape into loaves. Cover & let rise for 45-60 min. Slash, wash & top w/ seeds or granulated garlic. Bake in a steamed oven at 450 degrees for 30-35 min.
