Ingredients
- EGGS-OMELLETTE SAVOYARDE
- FRENCH
- FROM: James Beard Delights and Prejudices
- Make pancake style
- For each person- 2-3 boiled potatoes sliced 1/4 inch thick in omelet pan.
- Add 3 eggs beaten lightly with 1 tb water and cook omelet pancake fashion with grated Gruyere cheese. Slide it onto a slice of grilled ham on a hot plate and serve at once.
- Variation: can use parm or cheddar
- Best with Gruyere
