Squash-family Soup
By SallySmo
I got this recipe from my next door neighbor as part of a recipe exchange on email. Mike has a green thumb when it comes to tomatoes and veggies. How can a garden right next door to mine produce such an abundant crop? He's the envy of the neighborhood.
From Mike: I have been enjoying soups made from members of the sqaush family like Eggplant and pumpkin, it is easy :)

Ingredients
- Cut up the following, drizzle with olive oil and cook in 400 degree oven until slightly browned, we do not want to set off the smoke alarm:
- 2 Eggplant or 1 small Pumpkin or any other sqaush like vegatable
- 1-2 large onions
- 2-4 tomatos
- 4-6 cloves of garlic
- 1 jalapeno (optional I like the tang!)

Preparation
Step 1
Put broiled veggies in pot with 3-4 cups of chicken broth add some spices like tarragon and/or oregano. Bring to boil and cook for about 45 minutes, it should thicken up a bit, cook longer for thicker.
Blend cooked vegetables in blender a bit at a time or use hand blender (not beater) untill desired consistancy.
I have added chick-peas for texture at the end but optional.
Salt-pepper to taste, does not need much if any.
