Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 2 large carrotts, peeled and bias-sliced into 1/2 inch pieces
  • 1 1/2 cups fresh green beans (6oz.) cut into 2 inch pieces
  • 5 or 6 small new potatoes (8oz.) halved
  • 1 small onion cut into wedges
  • freshly ground black pepper

Preparation

Step 1

In a large bowl combine olive oil, soy sauce and ginger.
Add carrots, green beans, potatoes and onions
Stir gently to coat vegetables with seasonings
Spread vegetables evenly in a 9 x 9 x 2 or 8 x 8 x 2 inch baking pan
Sprinkle with pepper
Roast vegetables, uncovered, in a 425 degree oven for 20 to 25 minutes or just until tender, stirring once or twice.
