  • 1 onion chopped,1c.
  • 1 lg. tomato,chopped 1 1/2 cups
  • 1 jar alfredo sauce
  • 2 pkgs. 916 oz. each) pierogies,24,cooked,drained
  • 1 c. drained roasted red peppers
  • 1 pkg.(10 oz,) frozen chopped spinach,thawed,squeezed dry

Cooking time 55mins


Step 1

Preheat oven to 350
Coat 2 Qt. baking dish and non-stick skillet with cooking spray.
Heat skillet over med.-high heat.
Add onion and 1c. tomato;cook,stirring,5 mins.
Stir in sauce and 3/4c. water.
Spread 1/2c. sauce in baking dish; top with 8 pierogis,peppers 1/2c. sauce
Keep layering until pierogis are used
Cover,bake 25 mins. Uncover;bake 10 mins.
Let stand 10 mins.
Top with remaining tomato.
