Ingredients
- 1 (9 inch) baked pie shell
- 2/3 cup sugar
- 1/2 teaspoon salt
- 4 egg yolks, slightly beaten
- 2 teaspoons vanilla
- 1 cup whipping cream
- 1/4 cup cornstarch
- 3 cups milk
- 2 tablespoons butter
- 3/4 cup coconut
- 1/4 cup coconut

Preparation
Step 1
*Mix sugar, cornstarch and salt in 2 quart saucepan
*Gradually stir in milk
*Cook over medium heat ; stirring constantly, until
thickens and boils
*Boil and stir 1 minute
*Stir 1/2 hot mixture gradually into egg yolks
*Stir into hot mixture in saucepan
*Boil and stir 1 minute; remove from heat
*Stir in butter, vanilla and 3/4 cup coconut
*Pour into pie shell; press plastic wrap onto filling
*Refrigerate 2 hours
*Top with whipped cream
*Toast 1/4 cup coconut in a shallow pan in a 325 degree
oven until golden brown
