Ingredients
- 1 1/3 cup Spelt or Kamut Flour
- 2 tsp Baking Soda
- Pinch of Salt
- 2/3 cup unrefined sugar
- 2/3 cup Milk Alternative
- 1/4 cup palm or Coconut Oil, melted
- 1 tsp Vanilla
- 1 Golden Flax 'Egg' (1 Tbsp golden flax seed, ground + 3 Tbsp water. Whisk together and let stand for a couple of minutes)

Preparation
Step 1
Stir together flour, salt and baking soda.
Compine other ingredients in blender and blend until smooth.
If baking as one cake, simply grease baking vessel and pour in batter. Bake aprox 15 minutes @ 350.
If making individual cakes, cuto 'O's out of parchment paper to fit the bottom of the ramekin. Grease the vessel and put the rounds into the bottom of the molds. Cut longer rectangles, about 4" high and 8" long and curl around the outside f the the mold. This is so that the cake does not overflow and end up shaped like a muffin.
