Ingredients

  • 4 taco size (8inch) flour tortilla
  • 1 1/2 cups(6 oz) diced cheddar and pepper jack cheese divided
  • 1 package (8 to 12 oz) Dole special blends salad any variety
  • 1 can (15oz) black beans, rinsed and well drained
  • 1 can corn, drained
  • 1 cup chopped cooked chicken
  • 1/2 cup thick and chunky salsa
  • 2 tablespoons Italian dressing

Preparation

Step 1

1. Prepare tortillas on greased baking sheet. Bake at 375 degrees F for 5 minutes.

2. Sprinkle 2 tablespoons cheese on each tortilla. Bake 3 minutes or until cheese melts, cool.

3. Toss together salad blend, remaining 1 cup cheese, balck beans, corn, and chicken

4. Stir together salsa and salad dressing. Pour dressing over salad; toss to evenly coat. Place tortilla on each plate; top with salad.
