Ingredients

  • Butter or oil, for greasing
  • 1 1/4 Cups freshly grated Parmesan cheese, plus more for the pan
  • 1 head (or 1 1/4 lbs) caulflower, cut into florets
  • 3 T olive oil
  • 1 large red onion, top third sliced into rings, the rest coarsely chopped
  • 1/2 tsp chopped fresh rosemary
  • 2 1/2 tsp salt, divided
  • 1 1/2 tsp pepper, divided
  • 1 1/4 cup all-purpose flower
  • 2 1/2 tps baking powder
  • 1/2 tsp turmeric
  • 7 lg eggs, lightly beaten
  • 1/4 cup chopped fresh basil

Step 1

1. Preheat oven to 350. Butter a 10" springform pan and line bottom with a round of parchment paper. butter paper, then coat pan and paper with Parmesan, tapping out excess. In a large pot of boiling salted water, cook cauliflower over medium-high heat until soft, about 7 minutes. Drain well, and spread out on a baking sheet to cool and dry
2. In a large skilet, heat olive oil. Add chopped onion and rosemary and season with 1/2 tsp salt and pepper. Cover and cook over med-low heat, sitrring occasionally, until softened, about 8 minutes. Transfer to a large bowl and let cool completely.
3. Meanwhile, nin a large bowl, whisk together flour, baking poder, trumeric, 2 tsp salt, and 1 tsp pepper. Stir in Parmesan. Stir eggs and basil into onion mixture, then add to flour mixture. Fold in cauliflower. Scrape misture into pepared pan and top with onion rigns. Bake until goeldn brown on top and set in the center, about 40 minutes. Remove cake from oeven and let cool in pan 10 minuites. Remove pan ring, cut cake into wedges, and serve warm or room temp.
