Ingredients
- 3 plum tomatoes, cut into 1" pieces
- 6 Tbl. chopped fresh basil
- 2 Tbl. chopped red onion
- 4 Tbl. olive oil
- 1 Tbl. white balsamic vinegar
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1 1/4 panko breadcrumbs
- 4 boneless skinless chicken breast
- 1/4 cup creamy Caesar dressing
- 6 oz. fresh Mozzarella, cut into 1/4" slices

Step 1
1. Mix tomatoes, 2 Tbl. basil, onion, 1 Tbl. oil, vinegar, salt and pepper. Reserve. In separate bowl combine breadcrumbs and basil. Reserve.
2. Between sheet of wax paper pound chicken. Coat in dressing and then reserved bread crumb mixture.
3. In pan heat remaining oil over medium high heat and add chicken in batches. Cook 5 minutes on each side. Transfer to platter to keep warm.
4. Return chicken to skillet top with cheese until melted, 3-5 minutes. Transfer back to platter, and top with tomato mixture.
