Ingredients

  • 1 (15.5 oz.) can chickpeas, drained and rinsed
  • 1 (15.5 oz.) can red kidney, drained and rinsed
  • 1 carrot, peeled, and finely grated
  • 1 small onion, finely grated
  • 1/4 cup sunflower seeds
  • 2 Tbs. tahini
  • 1 garlic clove, peeled and chopped
  • 1 Tbs. vegetable bouillon powder

Preparation

Step 1

Preheat oven to 420*. Line a large baking sheet with parchment paper.

Place all the ingredients in a food processor and blend for 5- 10 seconds, until the mixture is fairly coarse.
Push the mixture down with a spatula and blend for a further 10 seconds.

Remove the blades of processor, use and ice cream scoop to drop on cookie sheet, flatten slightly with the back of the spoon.

Bake for 15- 18 mins. until lightly browned. Remove from oven and allow to rest.
