Ingredients
- 3 c. saltilne cracker crumbs, divided
- 2 eggs, beaten
- 1/2 c. onion, diced
- 3 T. mayonnaise
- 1 T. mustard
- 2 t. lemon juice
- 1/2 t. salt
- 1/4 t. pepper
- 1/8 t. cayenne pepper
- 1/4 t. hot pepper sauce
- 1 lb. refreigerated fresh lump crabmeat
- 2 T. butter
- 2 T. oil

Preparation
Step 1
Stir together 2 cups cracker crumbs, eggs, onion,k mayonnaise, mustard, lemon juice and seasoning; fold in crabmeat. Shape into eight, 3-inch patties; dredge in remaining crumbs. In a lrge skillet over medium-high heat, melt butter and oil together. cook crab cakes until golden, about 4 minutes on each side.
