Ingredients

  • CRUST
  • 1 yellow cake mix (1 layer size)
  • 1 large egg, fork-beaten
  • 2 tbsp water
  • 2 tbsp hard margarine, softened
  • 2 tbsp brown sugar, packed
  • 1/4 cup finely chopped walnuts
  • FILLING
  • 12 oz. cream cheese softened
  • 3/4 cup icing sugar
  • 1 tsp vanilla
  • TOPPING
  • 20 seedless red grapes
  • 1/2 ripe honedew melon, sliced
  • 1/2 can mandarin orange segments (10 oz. size) drained
  • 4 fresh strawberries, sliced
  • 3 seedless purple grapes, halved
  • GLAZE
  • 1/4 cup apricot jam (or orange marmalade)
  • 1 tbsp water

Preparation

Step 1

CRUST: Mix all 6 ingredients well in large bowl. Press in greased 12 inch pizza pan, forming rim around edge. Bake in 350 oven for about 15 minutes until wooden pick inserted in center comes out clean. Cool.

FILLING: Beat cream cheese, icing sugar and vanilla together in medium bowl until smooth and fluffy. Spread over cooled crust.

TOPPING: Arrange fruit over cream cheese mixture to make an attractive pattern.

GLAZE: Stir jam and water in small cup until combined. Microwave, uncovered on high for 10 to 15 seconds until liquelied. Pour through sieve. Discard solids. Dab surface of fruit with glaze to gie shine and to prevent fruit from drying out.
