Ingredients
- 1 1/4 cup yellow stone-ground cornmeal
- 3 Tbsp. unsalted butter, melted
- 3/4 tsp. salt
- 3/4 cup all-purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1 cup whole milk
- 1 egg

Preparation
Step 1
Preheat the oven to 375 degrees.
Butter a 11x7x2-inch metal baking pan.
Whisk the cornmeal, flour, salt, baking powder and baking soda in a medium bowl to blend.
Whisk the egg and milk in a small bowl to blend.
Add the milk mixture and the melted butter to the cornmeal and flour mixture and stir until just blended.
Transfer the mixture to the prepared pan and smooth the top.
Bake for 20 to 25 minutes until a tester inserted in the center comes out clean.
Transfer the pan to a rack and cool in the pan for about 10 minutes.
Turn the cornmeal out of the pan onto a rack and cool completely.
