  • 2 cups wild rice, cooked
  • 1/2 cup cooked corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped tomato
  • 1/4 cup cooked green peas
  • 1/4 cup diced red onion
  • 1/4 cup green beans, cut into pieces and cooked
  • 4 tbsp frozen apple juice concentrate
  • 2 tbsp red wine vinegar
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh tarragon
  • 1 tbsp fresh lime juice
  • Freshly ground black pepper
  • Salt
