Ingredients

  • 1 lb. fresh green beans, trimmed, cut into 1 1/2 inch pieces
  • 3 cups fresh spinach
  • 3 cups fresh swiss chard
  • 1 can chickpeas, drained
  • 1 cup grape tomatoes, halved
  • 1 cup diced cucumber
  • Garnishes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped walnut or pecan halves
  • 1 avocado, cubed
  • 1/2 red bell pepper, chopped
  • 1/4 cup cubed cooked chicken
  • Dressing
  • 1/4 cup olive oil
  • 1 small red onion, finely sliced
  • 2 cloves garlic, minced
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 1 tbsp. liquid honey
  • 2 tsp. soy sauce

Preparation

Step 1

Add enough water to reach the bottom of a collapsible steamer set in large saucepan and bring to boil, covered over high heat. Place beans in steamer basket and steam for 8-10 mins. or until tender. Cool slightly.

Meanwhile, assemble spinach, swiss chard, chickpeas, tomatoes and cucumber on a platter or toss in a salad bowl. Add warm green beans. Assemble, cheese, nuts, avocado, red pepper and meat on top of salad.

Make dressing by heating oil in a skillet over medium-high heat. Add onion and cook, stirring frequently for 5 mins. or until soft and translucent. Add garlic and cook, stirring constantly for 1 min. Whisk in lemon juice, vinegar, mustard, honey and soy sauce. Cook, stirring constantly until bubbly. Drizzle over greens on platter or toss in bowl.
