Leftover, homemade pulled pork or shredded chicken is delicious too...just add a cup or so of your favorite BBQ sauce to two cups of meat.

Ingredients

  • 20-oz container shredded pork in barbecue sauce
  • 16 -oz can refried beans
  • 2 T. lime juice
  • Cajun sasoning to taste
  • 2 tomatoes, coarsely chopped
  • 1 onion, chopped
  • 1/2 c. sliced jalapeno peppers
  • 1/2 c. fersh cilantro, chopped
  • 7-oz pkg. white corn tortilla chips, divided
  • 1/3 c. sour cream
  • 12-oz pkg shredded Cheddar cheese
  • Garnish: sour cream, fresh cilantro

Step 1

Microwave pork in barbecue sauce on high setting until heated through; stir and set aside. In a small bowl, mix beans, lime juice and seasoning; set aside. In another small bowl, combine tomatoes, onion, jalapenos and cilantro. Arrange half of tortilla chips in an ungreased 13"x9" baking pan; top with spoonfuls of pork, bean mixture, sour cream and half of tomato mixture. Arrange remaining chips on top; spoon remaining tomato mixture over chips. If desired, drizzle with any barbecue sauce remaining from pork. sprinkle to taste with additional Cajun seasoning; top with shredded cheese. Placing oven rack 6 inche below groiler, broil nachos for 5-7 minutes, until cheese melts and begins to turn golden. Garnish with additional sour cream and cilantro.
