Mom's Lemon Icebox Pie

A cool, old-fashioned treat to beat the summer heat.

Ingredients

• 1 1/2 c. vanilla wafers, finely crushed
• 1/4 c. butter melted
• 14 oz can sweetened condensed milk
• 1/2 c. lemon juice
• Optioanl: ffew drops yellow food coloring
• 1 c. whipping cream, whipped

Preparation

Step 1

Stir together vanilla wafer crumbs and butter. Press firmly into an ungreased 9" pie plate; chill. In a medium bowl, stir together condensed milk, lemon jmuice and food coloring, if using. Fold in whipping cream; pour into chilled crust. Chill for 3 hours, or until set.
