Ingredients

  • Glaze:
  • 1 cup butter
  • 2 cups white sugar
  • 2 eggs
  • 15 oz container of ricotta cheese
  • 2 tsp vanilla extract (I use 1 tsp. vanilla extract and 1 tsp. lemon extract)
  • 4 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 to 1/2 cup milk or combination of milk and half and half
  • 2 tbs butter
  • 4 cups confectioner’s sugar
  • 1 tsp lemon extract
  • Colored sugar and/or colored sprinkles (OPTIONAL)

Step 1

Preheat oven to 350°. Grease cookie sheets with shortening.

In large bowl, cream together butter and sugar. Beat in the eggs, one at a time, then stir in the ricotta cheese and flavorings. Combine the flour, baking powder and baking soda, stir into the ricotta mixture.

At this point, I refrigerate the dough for approximately 30 minutes or more and then proceed.
Roll or scoop dough into one inch balls and place on baking sheets. Recipe says to bake cookies for 12 minutes but my oven requires a couple minutes longer. They will not brown on top but will brown on bottom. Allow cookies to cool on baking sheets for three minutes before removing to a wire rack to cool completely.

Make glaze by melting butter in microwave and then add milk and continue to warm slightly. Add confectioner’s sugar and extracts. Dip cooled cookies in glaze, one at a time, and if desired sprinkle with sugar or sprinkles.
