Ingredients
- 1 cup tomato juice
- 1 Tbs wine vinegar
- 3 Tbs olive oil
- 1 clove garlic; crushed
- 1/4 tsp salt
- 1 md onion; peeled & quartered
- 4 lg very ripe tomatoes; peeled & chopped
- 1 lg cucumber; peeled & chopped
- 1 green pepper (bell or chili); seeded & quartered
- 1 tsp cilantro (fresh) minced
- fresh ground black pepper

Preparation
Step 1
Place first 6 ingredients in food processor - mix for a few seconds. Add remaining ingredients and blend til smooth. Chill for at least 1 hour before serving. Serve in bowls lined with lettuce leaves.
