Ingredients
- 1 (6 oz.) package yellow cornbread mix
- 2 tbsp. butter
- 8 stalks celery, chopped
- 2 bunches green pepper, chopped
- 1 green bell pepper, chopped
- 1 small white onion, chopped
- 7 pieces white bread, toasted and torn into pieces
- 20 saltine crackers, crushed
- 2-3 hard-cooked eggs, chopped
- dash curry powder
- salt
- black pepper
- chicken or turkey broth

Step 1
Preheat oven to 350. Prepare cornbread according to package directions; cool. Crumble cornbread in a large bowl and set aside.
Melt butter in a large skillet over medium-high. Add celery, green onion, bell pepper and onion; saute until tender.
Combine cornbread, celery mixture, bread, crackers, eggs, curry, salt and pepper. Stir in enough chicken broth until mixture is very moist.
Spoon into a greased oblong baking dish. Bake for 45 minutes.
