  • 4 TBSP. DRIPPINGS
  • 1/4 CUP FLOUR
  • 3 CUPS BEEF BROTH
  • 1 CUP WATER

Step 1

MIX FLOUR, SALT AND PEPPER. FLOUR MEAT, MELT SHORTENING IN SKILLET UNTIL HOT, THEN ADD FLOURED MEAT. BROWN ON EACH SIDE 5-8 MINUTES. REMOVE MEAT AND PUT IN BAKING DISH. POUR GRAVY OVER MEAT AND BAKE COVERED IN 275 DEGREE OVEN FOR 3 HOURS. OF COURSE, YOU CAN BAKE UNCOVERED AT 325 TO 350 DEGREES FOR AROUND 45 MINUTES. I USUALLY MAKE THIS FOR SUNDAY LUNCH, SO I USE THE 3 HOUR METHOD WHICH IS PERFECT FOR ME.

GRAVY:
POUR DRIPPINGS FROM SKILLET. RETURN 4 TBSP. DRIPPINGS TO SKILLET AND ADD ¼ CUP FLOUR. BROWN OVER MEDIUM HEAT, LOOSENING BROWN CRUSTY BITS FROM SKILLET. STIR UNTIL SMOOTH. AFTER BROWNING, REMOVE FROM HEAT AND STIR IN BROTH AND WATER SLOWLY USING WHISK TO BREAK DOWN AS MANY LUMPS AS YOU CAN. RETURN TO HEAT. STIR AND SIMMER UNTIL WELL MIXED BUT THIN. WILL THICKEN AS IT BAKES IN THE OVEN.
