Ingredients

  • 2 large eggs
  • 4 large egg whites
  • salt, pepper
  • 2 T scallions
  • 1/2 c cooked lean ham, diced
  • 1/4 ch shredded parmesan cheese
  • cooking spray

Preparation

Step 1

In a large bowl, beat eggs, egg whites, salt, pepper, scallions.
Coat skillet with cooking spray over medium heat. Pour in egg mixture and tilt skillet pan till covered with egg.

Cook omelet until eggs set, ocassionally lifting egg in skillet to let uncooked egg move to edges of skillet, 3-5 minutes. Sprinkle ham and cheese over eggs. Using spatula, ease up edges of omelet and fold in half, cook until heated through 1 minute.
