Ingredients
- Lemon Frosting:
- 18-1/2 oz pkg lemon cake mix
- 1/2 t. vanilla extract
- 1/4 t. lemon extract
- 3 pasteurized egg whites
- 1/4 c. cold water
- 2 c. sugar
- 1/4 c. light corn syrup
- 1/2 c. warm water
- 1 1/2 t. vanilla extract
- 1 t. lemon extract
- several drops yellow food coloring

Preparation
Step 1
Prepare cake mix according to package directions, adding extract to battedr. Bake in 4 greased 8" round cake pans. Turn layers our of pans; cool. Frost with Lemon Frosting and assemble cake on a serving plate.
Lemon Frosting:
Combine egg whites and cold wter ina small bowl. Beat with an electric mixer on high speed until stiff peaks form, about 4 minutes. Stir together sogar, corn syrup, and warm water in a microwave-safe container; microwave on high setting until boiling, 3-5 minutes. Let cool for 2 minutes; slowly add to egg white mixture. Beat with electric mixer on high speed for 4 minutes; add food coloring and continue beating to a spreading consistency. Makes about 4 cups frosting.
