Ingredients

  • 1/4 cup butter
  • 3 tbs. dark brown sugar
  • 3 tbs. corn syrup
  • 3/4 cups, sliced almonds
  • 1/4 cup chopped dates
  • 1/2 cup, all-purpose flour
  • Grated rind of 1/2 lemon and 1/2 orange
  • 1 tsp. lemon juice
  • 5 oz. simi-sweet chocolate, melted

Preparation

Step 1

In a small saucepan, combine the butter, sugar and syrup. Bring to a boil, stirring, remove from the heat. Mix in the remaining ingredients except the chocolate, and let cool.
Drop 3 tablespoon mounds of the mixture onto lined baking sheets, spacing the mounds well apart. Use a wet fork to spread into 3 inch rounds. Bake in a preheated 350 degree oven until golden brown, about 8-10 minutes. Cool on the sheets for about a minute, then transfer to a rack until cool.
Spread the chocolate on the flat side of each cookie; let dry, chocolate side up. Store covereed in a cool place.
