  • 2 c all-purpose flour
  • 1/3 c unsweetened cocoa powder
  • 1-1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 c sugar
  • 1 c mayonnaise
  • 1 tsp vanilla extract
  • 1 c cold water

Preparation

Step 1

Preheat oven to 325. Line a 12 cup muffing pan with paper liners.

In a small bowl, whisk flour, cocoa powder, baking soda and salt.

In a large bowl, with an electric mixer on medium, beat sugar, mayo and vanilla until combined. Beat in flour mixture in thirds, alternating with water, until blended. beat 1 minute, scraping bowl occasionally. Divide evenly among muffin cups.

Bake 22-24 minutes. Let cook 5 minutes then remove to wire rack.

Ice as desired.

*I quadrupled this recipe to make 48 and had a ton of batter left over!
