Ingredients

  • 4 cups water
  • sea salt
  • 1 lb. golden potatoes
  • 1/2 cup tahini
  • 1 tsp. salt
  • freshly squeezed juice of one lemon
  • 3-4 cloves garlic, minced
  • 4 tbsp. olive oil
  • 1 / tsp. ground cumin
  • 1/2 tsp. paprika

Preparation

Step 1

Add water, salt and potatoes to a large pot and bring to a boil. Reduce heat and simmer, covered for about 30 mins. or until tender. Drain well and let cool enough to peel. Cool thoroughly. Mash potatoes with tahini, salt, lemon juice and garlic until smooth. Add olive oil, cumin and paprika, mixing well.
