Ingredients
- 1-1/2 lb skirt steak
- Kosher salt and pepper
- 8 - 6 in flour tortillas
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro
- 1/4 cup pepitas or sunflower seeds, roughly chopped
- 2 Tbls. EVOO
- 2 Tbls. lime juice

Step 1
Heat grill. Season steak with 1/2 tsp each salt and pepper. Grill to desired doneness. Let rest at least 5 mins before slicing.
Warm the tortillas according to the package directions.
In a medium bowl, combine onion, cilantro, pepitas, oil, lime juice and 1/4 tsp each salt and pepper. Serve with the steak and tortillas.
