  • 2 tablespoons Dijon mustard
  • 1 teaspoon olive oil
  • 3/4 teaspoons paprika
  • 1/2 teaspoon table salt
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds uncooked new potatoes, red or white, quartered or halved

Step 1

Preheat oven to 425° F. Coat a 9 x 13 inch baking dish with cooking spray.

In a large bowl, whisk together mustard, oil, paprika, salt, thyme and pepper, add potatoes and stir to coat.

Transfer potatoes to prepared baking dish and roast 15 minutes, stir and roast until tender inside, about 15 to 20 minutes more.
