Gloria's Oatmeal Cake

Ingredients

• 1 cup oats
• 1 stick margarine
• 1 1/4 cups boiling water
• 1 cup white sugar
• 1 1/3 cup flour
• 1 tsp soda
• 1/4 tsp salt
• 1 cup brown sugar
• 2 eggs
• Topping
• 6 Tbsp margarine
• 1/4 cup evaporated milk
• 1 cup coconut
• 1 cup pecans
• 1 cup brown sugar
• 1 tsp vanilla

Preparation

Step 1

Put 1 cup oats in bowl and cut 1 stick of margarine over oats. Pour boiling water over all and let stand for 20 minutes. Sift together sugar, flour, soda, and salt in large bowl. Add brown sugar. Make a well in dry ingredients. Add 2 eggs. Use medium speed on mixer and add oat mixture. Bake at 320 degrees for 50 minutes.

Topping
Boil all ingredients until medium brown (10 minutes). When cake is done, spread with topping.
