Ingredients
- 3-4 boneless, skinless chicken breasts
- 2 cups breadcrumbs (I make homemade, a "how to" is below)
- 1/2 cup grated or shredded Parmesan cheese
- 3/4 of a stick of butter
- 3 cloves of garlic (minced or through a garlic press)
- pinch of salt and pepper

Step 1
1. Preheat your oven to 350 degrees. Line a rimmed baking sheet with aluminum foil and coat lightly with nonstick cooking spray. Set aside. Next, begin to melt the butter over medium heat in a medium sauce pan. Add the minced garlic and let butter melt.
2. Meanwhile, if making homemade bread crumbs, take 2 pieces of wheat bread and rip into large pieces. Place the pieces in a food processor (along with shredded parmesan, if using shredded and not grated) and PULSE until the bread is in crumbs.
Put bread crumb mixture into a shallow-ish bowl.
If using store-bought bread crumbs, ignore above step.
3. Remove garlic-butter melted mixture from heat.
4. Dip chicken in garlic butter mixture, and then coat in the bread crumb mixture. And coat it WELL. :)
5. Arrange chicken in a flat layer in your baking dish and pour any leftover butter mixture on top of the chicken.
6. Bake the chicken until it is lightly browned and just cooked through, 40 minutes. The baking time will depend on the thickness and size of the chicken you are using, so really cook it until the center is not pink, and it is yummy and juicy.
Kyle and I both liked this, and Kyle is not a fan of crispy chicken. It was yummy! Very flavorful. Make sure to serve with a "mixing" side dish. I made mashed potatoes from red potatoes. Yummy! Try it out. Easy to prepare, and then you just bake it. :)
