Ingredients
- 1/4 cup (60 ml) mirin
- 1/4 cup (60 ml) rice wine vinegar
- 12-ounce (340 g) jar apricot jelly
- 2 teaspoons fresh ginger, minced
- 2 teaspoons cornstarch
- 2 scallions, thinly sliced for garnish

Preparation
Step 1
1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 10, then to High.
4. Blend for 5 minutes or until heavy steam escapes from the vented lid. Turn off machine. Stir in scallions.
Note: Use on poached or grilled chicken breast, shrimp or duck.
