Ingredients
- 1 1/2 cups (270 g) chopped tomatoes
- 1/4 (227 g) head medium-sized cabbage, cut into wedges
- 1/2 cup (64 g) chopped carrots
- 1 rib (40 g) celery, halved
- 1/2 (55 g) medium onion, quartered
- 1 tablespoon frozen spinach, thawed
- 2 cups (480 ml) vegetable, beef, or chicken stock
- 1/8 teaspoon white pepper
- pinch dried rosemary
- 1 small garlic clove, peeled (optional)
- 3 1/2 cups (840 ml) water
- salt (to taste)

Preparation
Step 1
1. Place all ingredients into the Vitamix container and cover with water and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 5.
4. Blend for 15-20 seconds or until vegetables are chopped. If necessary, use the tamper to press any ingredients into the blades while processing.
5. Drain excess water from chopped vegetable mixture.
6. Pour ingredients into a large soup pot. Add 2 cups (240 ml) of stock. Bring to boil, then reduce heat and simmer for 30-40. Add additional seasonings, if desired.
