Ingredients

  • 1/2 cup light rum
  • 1 3/4 c raisins (mix of dark and golden)
  • 1/2 c (1 stick) unsalted butter, room temp, extra for coating pan
  • 1 1/2 c packed lt brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 c all purpose flour
  • 1 tsp salt

Step 1

medium bowl, combine rum and raisins. cover and soak for about 6 hrs. or overnight.
heat oven to 350*. Coat 9x9 baking pan w/ baking spray.
large bowl, use electric mixer to cream butter and brown sugar. Beat in eggs and vanilla, continue mixing until batter is well-combined.
Measure flour and salt, and sift together directly into batter. Mix the batter gently until no trace of dry ingredients remain.
Strain raisins using wooden spoon.
Spread batter evenly with silicone spatula into prepared pan. Batter is very sticky.
Bake for 30 mins. or until toothpick inserted comes out clean. Remove from oven and cool on rack for 1 hr.
cut just before serving.
