Ingredients

  • 1/2 pound sweet Italian sausage
  • 2 Tbsp olive oil
  • 1 small onion thinly sliced
  • 1/4 cup mozzarella cheese, grated
  • 1/4 cup Fontina cheese, grated
  • 1 Tbsp flour
  • 1/4 lb thinly sliced ham
  • 4 eggs
  • 3 Tbsp Parmesan cheese
  • 1/2 tsp salt
  • nutmeg & pepper to taste
  • 1 1/2 cups light cream
  • 1 1/2 Tbsp melted butter
  • 1/4 tsp oregano

Step 1

Saute Italian sausage in olive oil over moderately high heat until it is no longer pink.
Add the onion and cook the mixture stirring until the onion is wilted. Transfer the sausage and onion mixture to the pie shell with a slotted spoon. Sprinkle the mozzarella cheese and Fontina cheese over the sausage mixture and top with the sliced ham cut into 1/2" strips.

In a separate bowl combine eggs lightly beaten then grated Parmesan cheese, the flour, salt, nutmeg and pepper. Beat in the cream and melted butter, and pour over sausage mixture.

Bake the quiche in the middle of a 375 oven for 40 mins. or until custard is set. Sprinkle with oregano and serve warm.
