Hokey Pokey Cupcakes

A mini version of everyone's favorite poke cake! Make these using any flavor of fruit gelatin you like best. Try using a turkey baster to "spoon" the gelatin over the cupcakes so it's easier to squirt in the holes.

Ingredients

  • 18-1/4 oz. pkg. white cake mix
  • 3-oz pkg orange gelatin mix
  • 1 c. boilinbg water
  • 16-oz container vanilla frosting
  • Garnish: candy sprinkles, mini candy-coated chocolates, mini jelly beans.

Preparation

Step 1

Prepare cake mix according to package directionsl using egg white version. Fill 24 paper-lined muffin cups; bake as directed. Let cupcakes cool in pans for 15 minutes. Spray a large fork with non-stick vegetable spray; pierce cupcakes with a fork at 1/4-inch intervals. Place cupcakes on a paper towel-lined tray and set aside. Add gelatin mix to boiling waterk stirring until dissolverd; spoon over cupcakes. Chill cupcakes for 3 hours. Frost and garnish as desierd.
