Ingredients

  • Cake:
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 c sugar
  • 1 tsp salt
  • 1 c oil
  • 1 c crushed pineapple
  • 1/2 c pecans
  • 2 c grated carrots
  • 3 eggs
  • 1-1/2 tsp vanilla
  • Icing:
  • 8 oz cream cheese, softened
  • 1 box powdered sugar
  • 1 stick butter
  • 2 tsp vanilla

Preparation

Step 1

Mix flour, soda, cinnamon, sugar and salt in a large bowl.

In another bowl mix oil, pineapple, carrots, eggs and vanilla.

Add wet ingredients to dry and mix with an electric mixer for 3 minutes. Add pecans.

Bake in a greased and floured bundt pan or angel food pan for 1 hour at 350.

Mix all icing ingredients with mixer and spread on cooled cake.
