Grilled Salmon Salad

Ingredients
- 2 pounds fresh salmon filets skin on
- Olive oil for grilling
- Kosher salt to taste
- Freshly-ground black peper to taste
- 1 cup finely-diced celery
- 1/2 cup finely-diced red onion
- 2 tablespoons minced fresh dill
- 2 tablespoons capers drained
- 2 tablespoons raspberry vinegar
- 2 tablespoons good olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly-ground black pepper
- Dill sprigs (optional), garnish

Step 1
Prepare grill with hot coals.
Cut salmon crosswise into 4-inch wide slices. Rub salmon fillet slices with olive oil and sprinkle with Kosher salt and black pepper. Brush cooking surface with oil to prevent fish from sticking.
Grill fillets 5 to 7 minutes on each side, until rare. Do not overcook. Remove to a plate, wrap with plastic, and chill in refrigerator until cold and very firm.
Remove any skin on fillets that didn't come off during grilling. Break fillets into very large flakes and place in a bowl, adding any juice at bottom of plate.
Add celery, red onions, dill, capers, raspberry vinegar, olive oil, salt and pepper to taste. Mix well, garnish with dill sprigs, if using, and serve cold or at room temperature.
This recipe yields 4 servings.
