Ingredients

  • 1/2 cup (1 stick) butter, at room temperature
  • 2 1/4 cups sugar, divided
  • 2 eggs, lightly beaten
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup milk
  • 1 1/2 cups chopped walnuts
  • Grated rind of one lemon
  • 1 cup water

Preparation

Step 1

Preheat oven to 350°F. Coat a 9" x 13" baking pan with cooking spray.

In medium bowl, cream butter then add 1 cup sugar and eggs. Blend well and add flour, baking powder, baking soda, and cinnamon alternately with milk. Mix in nuts and lemon rind.

Blend well and pour into prepared baking pan. Bake 45 minutes, or until a wooden toothpick inserted in center comes out clean.

Meanwhile, in small saucepan, combine remaining 1-1/4 cups sugar and water over medium heat, and boil 15 minutes.

Pour sauce over cake while both are still warm. Turn off the oven and return cake to warm oven for 5 minutes.
Yields 12 to 16 slices.

Note

This cake is best served warm. If you're not going to serve it right after baking, just pop it in microwave on low power for about 1 minute or in a 250°F. oven for 10 to 15 minutes before serving.
