Proscuitto and cheddar puffs 0 Picture


  • 1 cup water
  • 1/2 cup butter, cubed
  • 1/4 tsp salt
  • 1/4 tsp black peper
  • pinch cayenne pepper
  • 1 1/4 cup flour
  • 4 eggs beaten
  • 1 cup shredded old cheddar cheese
  • 1/2 cup finely diced proscuitto

Step 1

Line baking sheets with parchment paper.
Preheat oven to 425.

In a heavy saucepan, bring water, butter, salt and peppers to a boil.
Remove from heat and add flour, stirring vigorously with a wooden spoon until dough comes away from sides of pan.
Make a well in the center of the dough.
Beat in with an electric mixer, eggs- one at a time.
Beat until smooth and shiney.
Stir in cheese and proscuitto.
Drop tablespoon full of dough, 2 inches apart onto parchment paper.
Bake 20 minutes til puffed and golden brown,

You may make 2 days ahead. Store in airtight container in the fridge.
Reheat in a 375 oven about 5 minutes.
