Ingredients

  • 4 cups unbleached all purpose flour
  • 8 teaspoons baking powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 2 sticks chilled unsalted butter cut into 1/2” cubes
  • 1-3/4 cups chilled whipping cream
  • 2 cups packed grated sharp cheddar cheese

Step 1

Preheat oven to 425 degrees. Blend flour, baking powder, sugar and 1 teaspoon salt in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse meal. Add 1-1/2 cups cream. Blend until dough comes together in moist clumps, adding more cream by tablespoonfuls if dough is dry. Transfer to large bowl, gently mix in cheese. Turn dough out onto lightly floured surface. Knead dough 30 seconds to bring together. Pat out to 1” thickness. Using 2” round cutter, cut out biscuits. Gather scraps, pat dough out and cut out more biscuits until all dough is used. Transfer biscuits to 2 large ungreased baking sheets, spacing apart. Bake until puffed and golden, about 15 minutes. Transfer to rack and cool.
