Bean and Ham Soup

Ingredients
- 7 cups water
- 1 pound dried navy beans (about 2 cups)
- 2 cups ham, cooked and cubed
- 1 ham bone
- 1 small onion, chopped (1/4 cup)
- 1/2 teaspoon salt
- 1 bay leaf
- Dash of pepper
- Add a can of pumpkin puree for color, flavor and extra vitamins

Preparation
Step 1
1. Heat water and beans to boiling in Dutch oven; boil
2 minutes
2. Remove from heat; cover and let stand 1 hour
3. Stir in ham, ham bone, onion, bay leaf, salt and
pepper
4. Heat to boiling; reduce heat
5. Cover and simmer, skimming off foam occasionally,
until beans are tender, about 1 1/4 hours (do not
boil or beans will burst)
6. Add water during cooking if necessary
7. Remove ham bone, trim meat from bone and stir into
soup
