Ingredients
- 1/4 c. butter
- 3 c. seet onion, thinly sliced
- 3 c. zucchini, thinly sliced
- 2 eggs, beaten
- 1/4 c. half-and-half
- 1 t. salt
- 1/8 t. pepper
- 1/4 t. dry mustard
- 1 c. Swiss cheese, shredded and divided

Step 1
Melt butter in a large skillet over medium ehat; saute onion and zucchini until tender. Arrange vegetables in a lightly greased 8"x8" baking pan. Combine eggs, half-and-half, salt, pepper, mustard and 1/2 c. cheese. Pour egg mixture over vegetables; sprinkle with remaining cheese. Bake at 375 degreese for 20 minutes, or until center is set.
