Ingredients
- 3 cups (540 g) tomatoes, peeled and quartered
- 1 medium onion, quartered or about 1/2 cup chopped
- 6-ounce (227 g) can tomato paste (or 3/4 cup)
- 1 garlic clove, peeled
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried crushed oregano
- 1/2 teaspoon dried crushed basil
- 1/4 teaspoon ground black pepper
- salt, to taste (optional)
- 1/2 teaspoon sugar or honey
- 1 bay leaf

Preparation
Step 1
1. Place all ingredients except bay leaf, into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 5 or 6.
4. Blend for 5 seconds until chunky.
5. Pour into saucepan. Add bay leaf and simmer over low heat for 30 minutes. Stir frequently. Remove bay leaf. Serve over spaghetti.
Variation: In a large skillet, brown ground beef, chicken or turkey over medium heat. Add to sauce.
