Ingredients

  • 3 (330 g) medium onions, peeled, quartered
  • 6 cups (1.4 l) beef or vegetarian broth
  • 1/2 cup (50 g) whole mushrooms, fresh or canned
  • 6 thick slices French or rye bread
  • 1 1/2 cups (170 g) shredded low fat Swiss or mozzarella cheese

Preparation

Step 1

1. Place onions, broth and mushrooms into the Vitamix container and secure lid.

2. Select Variable 1.

3. Turn machine on and slowly increase speed to Variable 3.

4. Blend for 15-20 seconds with tamper until onions and mushrooms are just chopped.

5. Pour mixture into a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes or until onions are clear.

6. Pour into bowls, top with bread and cover with 1/4 cup of cheese. Place bowls on cookie sheet and broil until cheese melts or place bread in a bowl, cover with cheese, and spoon hot soup over the bread. Serve immediately.
