  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1/2 lb mushrooms, chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 tsp
  • Minced fresh parsley for garnish

Preparation

Step 1

Preheat oven to 350F. In a large oven-proof skillet, saute onions and mushrooms in butter and olive oil until softened. Stir in rice, cooking about 1 minute or until rice is coated with butter/oil mixture. Add broth and salt. Bring to a boil. Cover and bake rice in oven until broth is absorbed and rice is tender, about 25 minutes. Garnish with parsley.
