Fresh Pink Lemonade

Ingredients

  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 2 cups fresh lemon juice (roughly 8 large lemons) **Reserve 4 of the squeezed lemon halves**
  • 4 c. watermelon pieces

Preparation

Step 1

Boil 6 cups of water, sugar and salt over high heat, stirring occasionally. Remove from heat and add reserved lemon halves. Cover and let stand 10 minutes.

Puree watermelon pieces in a blender with one cup of water.

Pour syrup from pot and fruit from blender through a strainer and into a pitcher. Stir in lemon juice.

Serve over ice.

Options: Serve over frozen berries instead of ice cubes for a berry pink lemonade.

Add fresh lemon slices and/or watermelon pieces to the pitcher of lemonade or serve on the rim of the glass to decorate.
