Ingredients

  • 1 cup quinoa
  • water
  • 3 lemons
  • 2 avocados
  • 2 cloves of garlic, minced
  • a handful of radishes, thinly sliced
  • basil
  • 1 Tablespoon ground cumin
  • 1/3 cup olive oil
  • 1/4 teaspoon chili flakes
  • salt and pepper to taste

Preparation

Step 1

Cook 1 cup quinoa and rinse under cold water; let dry. Blanche 1 pound frozen shelled fava [or in Edamame] in boiling water for 6 min. Segment two lemons into a bowl, squeezing in juice from the membranes and from a third lemon. Toss in two thinly sliced avocados. Add quinoa , beans, two minced garlic cloves, a large handful of thinly sliced radishes, finely chopped basil, 1 tablespoon ground cumin, 1/3 cup olive oil, 1/4 teaspoon chili flakes, and salt and pepper. Toss gently.

Garnish with more finely chopped basil.
