Ingredients
- 3/4 cup. cooked, mashed pumpkin
- 1/3 cup. packed brown sugar
- 1 1/2 tsp. vanilla extract
- 1 egg
- 1 3/4 cups all purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. allspice
- 1/4 tsp. ginger
- 3/4 cup. skim milk
- 1/4 cup. vegetable oil

Step 1
Beat pumpkin, sugar, and vanilla at medium speed of electric mixer 1 minute; add egg and beat well.
Stir together flour and next 7 ingredients. Add pumpkin mixture alternately with milk and oil, mixing well at low speed. Pour batter into 2 ( 5 x 2 1/2 - inch) loaf pans coated with cooking spray.
Bake at 350* for 45 mins. or until a wooden toothpick inserted in center comes out clean. Cool 10 mins. remove from pans, and cool completely on a wire rack.
